“Easy Menopause Bread”
This Bread is 95% fat free – no fat is added, as this is provided by the nuts and seeds
Ingredients: Makes 7 slices
- 1 cup spelt flour
- 1 cup millet flour
- 1 cup rolled oats
- ½ cup flaxseed
- ½ cup sunflower seeds
- ½ cup pumpkin seeds
- ½ cup sesame seeds
- ½ cup flaked almonds
- 2 pieces stem ginger finely shopped
- 1 ½ cups cranberries
- ½ ts nutmeg
- ½ ts cinnamon
- ½ ts ground ginger
- about 2 cups almond, or coconut or hemp milk
- 1 ts malt extract
- Put all the dry ingredients into a large mixing bowl. Add milk and malt extract, mix well and leave to soak for about 30 minutes.
- Heat the oven to 375 F and line a small loaf tin with baking parchment.
- If the mixture ends up to stiff – it should have a soft dripping consistency, just too thick to pour – stir in some more milk. Spoon the mixture into the prepared tin and bake for 1 ¼ hours. Test with a skewer and if it is not cooked through allow 5 – 10 more minutes.
- Turn out and cool on a wire rack. Eat in thin slices with ghee or butter.
