My favorite morning muffin:
¼ cup Chia seeds
1 cup mashed banana
½ cup almond flour
½ tsp. baking soda
¼ tsp. Himalayan crystal salt
¼ cup maple syrup or ¼ tsp. stevia
1 cup frozen blueberries
½ cup flax seed
1 tbs. lemon juice
water or almond milk
Place flax seed and Chia seeds in the blender with 1 cup of water and blend them on high speed until they are ground. These two seeds will be your egg substitute. Add the mashed banana, almond flour, baking soda, sea salt, sweetener and lemon juice into the blender until it becomes a smooth batter. You may need to add more water or also some almond milk. Pour the batter in to a bowl and add the frozen blueberries. Spray a muffin pan with coconut oil, and fill the batter into the muffin pan.
Bake for 20 minutes on 375 degree until the muffins turn golden brown.
Remove the muffins from oven and let cool down before eating.
You can freeze some and heat them up in a little toaster oven as your
Morning muffin.
